Cheese

Crottin à ma Manière

Québec

Pasteurized | Goat | Soft

Creamy & tangy with delicate caprine aromas

In 2011, master cheesemaker Simon Hamel founded L’Atelier Fromagerie. For 10 years prior, he’d been working & studying alongside other expert cheesemakers in both France & Québec whilst renting production facilities from colleagues to perfect his handcrafted artisan cheeses. Crottin à ma Manière is the triumph of this admirable pursuit. Inspired by Loire Valley goat’s milk cheeses, its naturally wrinkled rind ripens the cheese from the outside in, achieving a uniquely textured interior.

Alfred le Fermier

Québec

Raw | Cow | Firm

Supple, smooth, & honeyed

Fromagerie La Station de Compton sources their organic milk directly from their family-owned & operated farmstead, which also doubles as a maple grove. The Bolduc family are passionate 4th-generation farmers who take their relationship with their cattle & land seriously; ask them about their Holstein herd, and you will learn their favourite colour is green and their favourite food is white clover. This cheese is named in honour of the family’s great-grandfather, Alfred. Aged on wooden planks for 8 months, it develops a supple, golden paste and a complex flavour profile defined by aromas of honey & fruit. It was recently awarded Best in Show at the 2025 American Cheese Society Awards, one of many accolades.

Taleggio

Italy

Pasteurized | Cow | Semi-Soft

Creamy, rich & pleasantly funky

A classic washed-rind cheese named after the picturesque Val Taleggio in northern Italy. Records of a square, Taleggio-style cheese date back to the 13th century. Each wheel is aged on wooden shelves for 35 days and meticulously washed with brine once a week to lock in moisture and cultivate its signature rind, teeming with protective flora. Beneath this rosy rind lies a supple, squishy paste, not unlike a ripened brie. It delivers a luxurious balance of creamy, milky richness and a touch of savoury funk. Celebrated as a wonderful table cheese, Taleggio is also legendary in Lombardy for its exceptional melting qualities, making it a dream in rice and pasta dishes. See how the cheese is made here.

Cheese candy. Butterscotch, salted caramel fudge

This quintessential Dutch Gouda is rooted in a century-old heritage. In 1916, founder Jochem Blaauboer established the landmark dairy cooperative in the small town of Lutjewinkel, uniting dairy farmers in North Holland. To this day, the cheesery sources high-quality pasture milk (weidemelk) directly from local dairies surrounding the town. To achieve Gouda's signature sweet profile, the curds are traditionally scalded and washed to remove excess whey and lactic acid. Aged 18 months, its fudge-y paste is punctuated by savoury pockets of tyrosine crystals, delivering rich notes of butterscotch and caramel. Cheese candy.

Cheese

Fleur des Monts

Québec

Pasteurized | Ewe | Firm

Fresh hay & toasted nuts

A soulful expression of Québec’s terroir, Fleur des Monts is a farmstead cheese inspired by the ancient traditions of the French Pyrenees. A product of Fromagerie Moutonnière’s sheer dedication to the craft, every step happens locally in Sainte-Hélène-de-Chester. The flock grazes freely on wild pastures from spring until the first snowfall, infusing the milk with the aromatic complexity of native herbs and grasses. Aged for three to six months, it reveals a delicately pastoral flavour profile, with notes of fresh hay and oily, lightly salted, toasted nuts. Fleur des Monts is a beautifully balanced cheese that captures the seasonal nuances of the lush rolling landscape.
